SUSHI BURRITO WITH WASABI CILANTRO DRESSING

If you're like me and you love sushi, this is a really great way to eat it! I made a side of some wasabi cilantro dressing to dip my burrito in. It was so good. Every time I make sushi, the hardest part is fitting all of the ingredients into my sushi roll. The nice thing about making a sushi burrito is it allows you to put more fillings in. Load that baby up with all the good stuff! 

Sushi Burrito

  • 2 cups white rice, cleaned and cooked according to package directions
  • 3-4 mini cucumbers or 1 English cucumber cut into strips
  • 1 large carrot, peeled and cut into sticks
  • 1 package imitation crab, shredded and chopped
  • 1 package smoked salmon
  • spicy mayo
  • teriyaki sauce (I used G Hughes sugar free sauce)
  • Furikake rice seasoning
  • pickled cabbage (about a cup) you can also use regular cabbage
  • microgreens (or any greens you want)
  • nori/seaweed wraps
  • rice vinegar
Lay your Nori down rough side up. Cook your rice according to package directions. Once its cooked, transfer it to a separate bowl to cool and season with some rice vinegar. Lay your rice down on the nori leaving about an inch at the end. Tap a little bit of water on the part taht is left without rice to wet it down and help the burrito seal up as you roll it. Add all of the ingredients in and roll it up! Cut it in half and dip in the Wasabi Cilantro dressing! 

 

Wasabi Cilantro Dressing:

  • 1 bunch cilantro (stems included)
  • 1 handful of spinach
  • 3/4 cup Greek yogurt
  • Cajun seasoning
  • 1/2-1 t wasabi powder
  • 3 Cloves Garlic
  • Juice of one lemon
  • 2 T nutritional yeast
  • Splash of water
  • Splash of extra virgin olive oil

blend all ingredients together. Store in the Fridge. Serve with sushi or anything of your choice!
