
SUSHI BURRITO WITH WASABI CILANTRO DRESSING

If you're like me and you love sushi, this is a really great way to eat it! I made a side of some wasabi cilantro dressing to dip my burrito in. It was so good. Every time I make sushi, the hardest part is fitting all of the ingredients into my sushi roll. The nice thing about making a sushi burrito is it allows you to put more fillings in. Load that baby up with all the good stuff!
Sushi Burrito
- 2 cups white rice, cleaned and cooked according to package directions
- 3-4 mini cucumbers or 1 English cucumber cut into strips
- 1 large carrot, peeled and cut into sticks
- 1 package imitation crab, shredded and chopped
- 1 package smoked salmon
- spicy mayo
- teriyaki sauce (I used G Hughes sugar free sauce)
- Furikake rice seasoning
- pickled cabbage (about a cup) you can also use regular cabbage
- microgreens (or any greens you want)
- nori/seaweed wraps
- rice vinegar
Wasabi Cilantro Dressing:
- 1 bunch cilantro (stems included)
- 1 handful of spinach
- 3/4 cup Greek yogurt
- Cajun seasoning
- 1/2-1 t wasabi powder
- 3 Cloves Garlic
- Juice of one lemon
- 2 T nutritional yeast
- Splash of water
- Splash of extra virgin olive oil
blend all ingredients together. Store in the Fridge. Serve with sushi or anything of your choice!
