SPICY DILL PICKLE CHICKEN SALAD

Ingredients:

  • 1 cup Greek yogurt
  • 1 TBSP Dijon Mustard
  • 1/2 cup pickle juice
  • Cajun seasoning
  • salt
  • pepper
  • garlic powder
  • as much hot sauce as you want (more or less depending on how spicy you want it)
  • 2 cups cooked and shredded chicken *(I added my chicken breasts to an instant pot with a cup of chicken stock and cook on manual for 10 minutes, and shred. easy perfect shredded chicken every time, you can also use a rotisserie chicken if you want precooked chicken.
  • 1 bunch fresh dill, chopped
  • 13/4 cup chopped pickles
  • 3-4 ribs celery, finely diced
  • 2-3 grated carrots

 

DIRECTIONS:

  1. Whisk together Greek yogurt, Dijon mustard, pickle juice, Cajun seasoning, salt, pepper, and garlic powder with 1/4 cup hot sauce.
  2. Mix in the shredded chicken, diced celery, grated carrot, chopped pickles and chopped fresh dill. 
  3. Stir to combine until fully mixed. 
  4. Add more hot sauce if desired. 
  5. Serve with chips, in a wrap, with veggies, or just eat it plain by the spoonful!
